A small cylindrical soft pasteurised goat cheese from Somerset. It has a white rind and a melt in the mouth texture. When young it is mild and crumbly and has a slightly nutty flavour. As it ripens from the outside towards the centre, the white curd becomes softer and creamier, and develops a fuller flavour. The cheese is enjoyed at different stages of maturity, younger and firmer cheese is particularly good for crumbling into salads and for grilling. Try cutting in slices or in half, grill and accompany with caramelised onions and a rocket salad. Alternatively, for a very ripe consistency allow the cheese to mature up to the use by date. Once opened, store Capricorn in the refrigerator wrapped in waxed or greaseproof paper. See also
