Produced by Richard Hollingbery on his farm in Somerset using a 70 year-old local recipe. It is allowed to mature for at least 12 months, which provides it with its rich and uniquely distinctive flavour; it also has the benefit of travelling only two miles from the dairy to the cheese manufacturer so helping capture that rich creamy flavour typical of the cheese.
As an organic cheddar with no preservatives, we recommend that the cheese is refrigerated at all times.
