A traditional cheddar produced by Jamie Montgomery using milk from his own cows at Manor Farm, North Cadbury (Camelot) in Somerset. This is one of the few genuine farmhouse cheddars made from unpasteurised milk in the traditional way and then allowed to mature for 16 months. The result is a cheddar which has a wonderful depth of flavour, from a creamy start to a nutty finish.
