Many regard the grain spelt as a healthier alternative to wheat. Spelt was widely farmed throughout Europe until mass production favoured wheat because of its easily removable chaff. But the hard chaff that encases spelt is the secret to its nutritional value as it gives the plant extra protection from disease and weather. Spelt grain contains more protein than most wheat grains, it is slow release energy food and provides fibre, iron and complex B vitamins.
