For 1,000 years the waters from the Upper Axe have spilled from Wookey Hole to power mils along thsi man-made watercourse. Now only Burcott Mill remains, one of only 50 fully working water-powered flour mills operating in Britain.
Use Fine for a light wholemeal loaf with plenty of texture, there is no need to add strong flour and is perfect for breadmakers.
