Description: Rosemary is a small perennial evergreen shrub related to mint, native to the Mediterranean region. The leaves are highly aromatic and have a slightly bitter taste.

History: The first use of rosemary is recorded around 500 B.C. in Greece, where it was recognized for its alleged ability to strengthen the brain and memory. Greek students braided rosemary into their hair to help them with their exams. In Great Britain, there is an old garden legend that reads, "where rosemary thrives the mistress is master".

Use: Rosemary is generally used sparingly, particularly with lamb, duck, chicken, sausages, seafood, stuffing, stews, soups, potatoes, tomatoes, turnips, other vegetables.

Medicinal properties: Rosemary is a warming herb that aids circulation and has marked anti-oxidant properties. Poor circulation with cold extremities. Low blood pressure. Omega Nutrition Flax seed
This cold milled flaxseed is rich in both essential fatty acids, alpha-linolenic acid (Omega 3 group) and linoleic acid (Omega 6 group). It is also rich in oleic acid (Omega 9). Documented use of flaxseed dates back to 5,000BC and the Romans and Charlemagne marched their armies on it!

It is crunchy and has a light nutty flavour as cold milling chops the seed without heating the mill blades, so the essential fatty acids remain intact. The flax is not crushed, so the precious oil is retained. Vacuum-packed in a lined, resealable foil bag to retain freshness.

Flax seeds offer both lignans and essential fatty acids (EFA's). EFA's are essential for maintaining good health by acting as building blocks in cell membranes and aiding in the production of hormone-like substances that are necessary for energy metabolism.

Plant lignans are converted in the colon by bacterial fermentation into a form of lignans that can be used by humans. The Omega 3 oil content has to be at least 57% and this is ensured by these flaxseeds being grown in Canada north of the 53rd parallel (further north continues into the north polar regions) as the cold climate determines the levels of Omega 3 in the flaxseed. It is the coldness during the flowering i.e. the last 10-25 days that raises the levels of Omega 3 and decreases the Omega 6 content. The same plant grown in a warmer hemisphere will have a high Omega 6 content and little or even no Omega 3!
